1 c. milk \
1 T lemon juice } mix and let stand for 10 minutes
1 tsp vanilla /
1 1/2 c. brown sugar
2/3 c. vegetable oil
1 egg
2 1/2 c. flour
1 tsp salt
1 tsp soda
1 1/2 cup chopped rhubarb
1/2 c. chopped walnuts
*1/4 c. Brown sugar 1/2 tsp cinnamon 1 T melted butter* - mix and put on top of unbaked batter*
Preheat oven to 325* grease 2 9x5 pans. In large bowl mix 1 1/2 c. br. sugar, oil, and egg. Then add flour, salt and baking soda. Fold in rhubarb and nuts.
Bake 40 minutes, until toothpick comes out clean.
Jaynee made this at my house- the first time she just followed the recipe (I don't think she really did the topping) then the next day she made it again, only usin g1/2 or 1/3 the sugar, and she added 1 cup of fresh grated coconut (we had just gotten 4 coconuts from our bountiful baskets...) That was also yummy. The kids don't like it quite as much, its not sweet, but that's what she was going for, you can put jam on it and it's not too sweet. :) I love rhubarb!!!
