
For October, let's share the breakfast foods we love. John and I love inventing recipes and we created this one for an early dinner one day and loved it. (Johnny named it.)
The Italian Breakfast SmashUp
Thinly slice one small potato and boil it for 10 min. or until tender. Drain. Set aside. Crack 4 eggs into a large bowl. Beat some milk into the eggs (a few tablespoons). Add some: chopped parsley, chopped roasted red peppers, diced tomatoes, minced garlic, bacon bits, a few drops of hot sauce, romano and parmesan cheeses, cream cheese (one or two big spoonfuls), the potatoes, chopped onion, and salt and pepper to taste. Whisk these together until everything is incorporated. Put a pat of butter in a large skillet with sides and melt it down. Add egg mixture and whisk it around to break up the cream cheese. Slowly stir it around with a spatula until the eggs are cooked. Serve over torn up pieces of bread or bagel (toasted, if desired).

It was kind of a fridge clean-out thing. "What Italian-type stuff do we have leftover?" And we just kept throwing stuff into the bowl. Johnny helped me break out of being nervous to experiment long ago. Mostly because he'll eat anything, if the unsuccessful attempts. It was a really fun lunch date!
